One name is derived from the shape, which reminds of the sole of a shoe, the other from the wooden block that is used to stamp the dough into shape. The patterns in the center are stamped with a wooden block, the bulge around is also a result of the stamping. The pattern block is traditionally considered a family heirloom. Each family uses their own passed downs pattern. On the festive table, the sole cakes get stacked into a big tower, which is filled with Aaruul and other sweets. There is always an uneven number of levels in the tower, and each level is formed by 5 cakes. At the top comes a little heap of Urum. The number of levels indicates the status of the family, which is determined by the age of the parents and the number of their children. Aaruul - Ааруул Dried curds. PreparationLeave the milk (usually from cattle, yaks, camels) to curdle. Lift out the solid components with a fine cloth and let as much of the liquid drip off. Then press the mass into a cake of a few cm height between two wooden boards, weighted down with stones. Cut the solid cake into pieces of about 10 length. Arrange the pieces on a wooden board and put them into the sun for drying. In Mongolia, this happens on the roof of the yurt. A cover of fine white cloth will keep the birds away. Urum - Өрөм"White butter", clotted cream. The milk of yaks (or in the Gobi camels) is best, because it contains more fat. The first few pictures show the production of Urum from yak milk. PreparationHeat the milk on the stove, just below boiling. In regular intervals, lift a ladle full into the air, and let it splash back into the pot, to create foam. This "scooping" (самрах) is necessary because the shallow wok-like Mongolian pan makes normal stirring ineffective, but it also has the quality of a ritual. Once there is enough foam, let the milk cool down slowly. Now it needs to rest overnight. In the morning, a skin of about 1 cm clotted cream has formed, which is taken off. Stored dry and cool (in a wooden vat or a sheep's stomach), Urum will stay palatable for a full winter season. Cattle milk contains less fat, so the skin will be thinner. UseUrum is often offered to visitors as a snack, or added to mongolian milk tea. Of course it can also be used on a slice of bread instead of butter, even though bread is not a traditional mongolian food. And last but not least it can be further processed to create Khailmag (Caramel pudding) By productsThe remaining skimmed milk gets used for various other products, primarily beverages such as Tarag (Yoghurt), Isgelen Tarag (Kefir) and Mongol Arkhi (milk liquor). Sorry I don't have pictures/video for you, but if you can find it I thought it was interesting even though I don't speak Japanese. Naruto oyakata was very natural and engaging throughout, Kisenosato mentioned he was nervous at the beginning but he seemed to grow more comfortable as the show progressed. Kabutoyama also made a brief appearance with a lower-ranked wrestler to demonstrate shiko (keep an eye out for the female host attempting shiko in what looked like 4" heels). Forget all the bullshit that japanese would tell you about its "unique" taste and what their supposed cuisine is based on. Majority of the populace did not taste a grain of it before the Meiji restauration and some long after that. (I don't want to get into any arguments and do feel like providing any links to any studies). Anyhow, if you could become a president or a prime minister of your fatherland why would you aim at becoming some anonymous oyakata? I think that Hakuho if were to become a Japanese citizen probably won't do anything about that as long as his father is alive, just a hunch.
