My recollection is that once a rikishi is retired, they are not permitted to (or probably more accurately, not supposed to) create new tegata - they're reserved solely for active wrestlers. I don't have any source to hand though, so look forward to those more knowledgeable chiming in!

Working for Hakuhō? I wouldn't be surprised if Hakuhō was a sleeping partner in the restaurant.

His restaurant Yokozuna Tonkatsu - Dosukoi Tanaka in Sumida ward with dohyo is in the news for months - with plenty of videos from foreigners doing sumo on it with ex-rikishi, esp. Jokoryu

He joined Sadogatake-beya and went with ex-Kotokaze to his new heya, preparing the Sadogatake-beya taste as chanko-ban in Oguruma-beya. After intai he worked in Osaka in the cleaning and construction business and elsewhere and met his wife there. Shortly after they started a kitchen car in the Kansai area they were hit by the Corona disaster. Because there was no kitchen car in the hometown of his mother, they moved to the Oki islands and aim for a 2nd car now, with the goal to have one in every prefecture once.

He has his restaurant, but the whole show and the restaurant is managed by o-sumo-san.dot.com osumo-3.com - sumo experience.com: a company that employs ex-rikishi for purposes like sumo shows etc., run by public company Way, both with the same managing director - Tanaka is a very common name, so this Aya Tanaka probably is but doesn't have to be related.

I was perusing Google Maps in the Ryogoku area, and I notice that the chanko restaurant first opened by ex-Ozeki Ouchiyama is still open about 5 blocks from the Kokugikan, still run by his descendants.

Since I didn't see it in this thread, I'll add here too for posteriority that ex-M13W and Waseda University alumnus Kimikaze is apparently running sumo restaurant Kimikaze no Mise in Tokyo https://kimikazenomise.shop

As is common for ex-rikishi, seems like a chanko nabe shop.

Wakashoyo (ex-Otowayama, ex-MMA fighter, pro-wrest, talento etc.) on March 15th renewal opened his soba restaurant Chanko tsukemen Tokyo King in Kakogawa, Hyogo - like many he uses his shikona as official name. Ex-Tomozuna ex-Kaiki's son ex-Kaishoryu used to run the Sumo bar Kai-chan (formerly Chanko Kai), preserving the heya's 100 year chanko tradition, located at the old Tomozuna-beya location from 25 years ago.

After the old one, today a new sumo bar Kai-chan-nel has appeared youtube/@sumobarkaichannel - with an interview of Kaiki in the bar. And it looks the switch to the present sumo bar is due to the new Kai-chan Waka there who had the danpatsushiki on April 16th 2023 - looks much smaller though than Kainowaka used to look. https://sumobarkaichan.com/author/kaichan/

The time has come. Matsuda will retire after the basho and become successor to the well established restaurant Matsuda of his parents in his hometown Iida (since Meiji 20)

Matsuda really is a media favourite - Nikkan sports posted a premium article about his retirement, as the first in a series "Sayonara ozumo", about 2nd careers.

He joined after high school, scouted by Minezaki-oyakata, from judo background without sumo experience. His most memorable bout is the sandanme play-off with Enho Aki 2017.

A year and a half after that his father had a breakdown and he had to start thinking about his 2nd career. The free part of the article stops here - the title is: Matsuda's decision-  "I want to help my father" - going into the family business without regret

A koenkai member of Minezaki-beya was one of the guests, the oyakata came to the restaurant and he was scouted since he was in middle school. He wanted to try his strength and went to Iida technical high school and joined after graduation, being in charge of chanko with 2 others. The one day kyujo in his career was after a fusen on day 8 Kyushu 2021 - he couldn't walk after he pulled a muscle, but it felt like he'd betrayed the fans. With painkiller injections he returned. With the years (now 29) injuries multiplied, but "It's meaningful to continue to appear"

If not to the sumo world, he had wanted to go for cook and continue the family business. His father kept telling him "You don't have to care about me", but seeing the health of his father deteriorate when he was on a visit home: "The feeling of wanting to help became strong".

His father (72) is still in charge of the cooking, the whole family is managing the restaurant, he is still washing the dishes, cleaning the tables and preparing the coating for ebi-fry and kara-age. Cooking: "I want to go for that without rushing." In the future he wants to add the chanko nabe of the heya to the menu. He also wants to teach the kids at the Matsuo sumo club.

Shohozan on May 19th has opened "Yakiniku hormone (offal) Shohozan" near Funabashi station. After living 18 years with the family in Fukuoaka, he lived 18 in Funabashi, the heya location.

He wanted to display some of his kesho mawashi and made shelves for it , made towels out of the scrap ends from the shimekomi, cut off to adjust it to the body size and used them for decoration. The walls are not undressed concrete, but wallpapers looking like undressed concrete, so that the texture of the shelves looks good.
