The last bit is always done by the yokozuna himself (I guess the professionals tidy it up a bit afterwards)

There will always be a red painted piece of stone left in each the kanji character in his name. He has to chip off each of them.

look at the above picture, below his two hands, the Haruo kanji each have one red dot. Once he chips off all of them, a professional will clean it up.

I remember seeing the Kisenosato name engraved in the stone several months after his promotion, but before this ceremony and noticed the red dots.
